Staff Training

With a view to staff training FSSAI introduced FoSTaC under which staff trained. Food Safety Supervisors (FSS) are appointed by the Food Business Operator and holds a valid FoSTaC certificate issued by the Food Safety and Standards Authority of India. Food Safety Supervisors are trained in good hygienic and sanitary practices to be followed by all food business operators as per requirements in Schedule 4 of Food Safety and Standards (Licensing and Registration of Food Businesses) Regulations, 2011.

Hygiene Maintainance

Businesses must make sure they keep all food handling areas clean and follow hygiene rules as required by FSSAI after registering.

FSSAI’s Hygiene Rating Scheme is an online, transparent scoring and rating process which certify food businesses on the basis of their food safety compliance and allow consumers to make informed choices. This scheme aims to –

  1. Encourage food businesses to improve their hygiene and safety standards.
  2. Allow consumers to make informed choices pertaining to food outlets they eat or procure food.

Record Keeping

To keep track of food, businesses must maintain detailed records of where the food comes from, how it’s made, and how it’s sold. This is a required step after registration, as per the rules.

Food Labelling Compliance

Businesses must follow FSSAI rules when labeling food products. This means they need to list all ingredients correctly, so consumers know what’s in the product. They must also provide nutritional information, such as calories, fats, and other key nutrients, to help customers make healthy choices. Additionally, businesses must clearly show the expiry date or best-before date on the product, so consumers know when it’s no longer safe to eat. These labeling requirements are mandatory under FSSAI guidelines, and businesses must ensure they are fully compliant to avoid penalties and protect consumer health.

Annual Returns Submission

Businesses must submit their annual returns to FSSAI using Form D1 by May 31st each year. This is required to meet regulatory standards and stay in compliance with FSSAI rules. Submitting this form on time helps ensure that the business is following all necessary food safety regulations. Failure to submit the annual return by the deadline can lead to penalties or other legal consequences. It’s important for businesses to keep track of this deadline to avoid any issues and maintain good standing with FSSAI.

Food Safety Audits

To strengthen the food safety surveillance system, FSSAI has envisaged audits of Food Business Operators through Private Auditing Agencies. In order to cultivate and foster the growth of compliance culture, FSSAI is enabling compliance through private recognised Auditing Agencies. Food Safety and Standards (Food Safety Auditing) Regulations, 2018  have been notified on 28th August 2018 for the same.

Food Safety Audits will reduce the regulatory Food Safety Inspections conducted by Central or State Licensing Authorities. Satisfactory Audits will lead to less frequent regulatory inspections by Central or State Licensing Authority except the regulatory sampling. This will strengthen food safety surveillance system and encourage self-compliance while at the same time assuring safe food to the consumers.
